  • 2 lbs boneless beef sirloin, thinly sliced
  • 1 large onion, thinly sliced
  • 3 bell peppers (red, green, and yellow), thinly sliced
  • 8 oz button mushrooms, halved
  • 4 cloves garlic, minced
  • 1 cup firecracker sauce (recipe below)
  • 12 flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1 avocado, sliced

Instructions

  1. Heat a large skillet over high heat. Add the beef and cook until browned, stirring frequently. Drain off any excess fat and set aside.
  2. In the same skillet, add 2 tbsp of firecracker sauce and cook onions, peppers, and mushrooms for 5 7 minutes or until tender. Stir in garlic and cooked beef, then add the remaining firecracker sauce. Cook for another 3 minutes.
  3. Assemble fajitas by placing a generous portion of the meat mixture onto each tortilla, topping with cheese, avocado slices, and cilantro leaves. Fold in half and serve immediately.
