Ingredients
1 cup water
2 tbsp unsalted butter
1/4 tsp salt
1 cup all
purpose flour
2 eggs
1 tsp ground cinnamon
1/2 cup granulated sugar
Vegetable oil for frying
Instructions
In a medium saucepan, combine water, butter, and salt over medium heat. Bring to a boil, then reduce the heat to low and stir in flour until the dough forms a ball. Remove from heat and let cool slightly.
Add eggs one at a time into the dough, mixing well after each addition. Transfer to a piping bag with a large star tip.
Heat 2 inches of vegetable oil in a deep frying pan to 350°F (175°C). Pipe strips of dough directly into the hot oil and use a knife or scissors to cut them off. Fry for about 2 3 minutes per side, until golden brown.
In a shallow dish, combine sugar and cinnamon. Remove fried churros from oil and immediately toss in the cinnamon sugar mixture. Serve warm with your favorite dipping sauce.
Chef’s Insight
Use a high smoke point oil for frying, such as canola or grapeseed.
