Ingredients
- 2 lbs flank steak, thinly sliced against the grain 1/4 cup soy sauce 1/4 cup brown sugar 1/4 cup lime juice 1/4 cup fish sauce 3 cloves garlic, minced 1
- inch piece ginger, grated 2 tablespoons sriracha 1 teaspoon ground coriander 1 teaspoon ground cumin 1 teaspoon paprika 1/4 teaspoon cayenne pepper (optional)
Instructions
- In a large mixing bowl, combine soy sauce, brown sugar, lime juice, fish sauce, garlic, ginger, sriracha, coriander, cumin, paprika, and cayenne pepper. Mix well until all the ingredients are fully incorporated.
- Add the thinly sliced flank steak to the marinade, ensuring each piece is evenly coated. Cover and refrigerate for at least 4 hours or up to overnight.
- Preheat your grill or griddle to medium high heat. Remove the beef from the marinade, letting any excess liquid drip off.
- Grill the beef jerky sticks on each side until they are cooked through and slightly charred, approximately 2 3 minutes per side.
- Transfer the cooked jerky to a plate and let them cool slightly before serving.

The key to perfect street food-inspired jerky is marinating for at least 4 hours, allowing the flavors to penetrate deeply into the meat.

Be sure to use thinly sliced beef for quicker cooking and more tender jerky.
