Ingredients

  • 1 lb boneless pork shoulder
  • 1 cup Memphis Meltdown BBQ Sauce (see recipe below)
  • 8 slider buns
  • 2 cups shredded cheddar cheese
  • 1/4 cup pickled jalapeños, sliced

Instructions

  1. Preheat your grill to medium heat, around 350°F (175°C).
  2. Place the pork shoulder on the preheated grill and cook for 2 hours, or until it reaches an internal temperature of 190°F (88°C), basting with BBQ sauce every 30 minutes.
  3. Remove the pork from the grill and let it rest for 15 minutes. Shred the meat using two forks, discarding any fat.
  4. To assemble the sliders, split the buns and place them on the grill for 2 3 minutes to toast.
  5. Top each bottom half of the bun with a generous portion of shredded pork, then add a spoonful of BBQ sauce, followed by a layer of cheddar cheese and jalapeño slices. Place the top half of the bun on each slider and return to the grill for 1 2 minutes until the cheese is melted.
  6. Remove from the grill, insert toothpicks if needed, and serve immediately.

Chef’s Insight

The key to tender, juicy pulled pork is slow cooking and basting it with BBQ sauce regularly.

Notes

Customize your sliders with different cheeses or types of pickles for added variety.
