  • 2 tablespoons chipotle pepper in adobo sauce

  • 1 teaspoon chili

Instructions

  1. In a small bowl, combine mayonnaise and chipotle pepper in adobo sauce. Set aside.
  2. Preheat a grill or grill pan to medium high heat.
  3. Brush corn with lime juice and season with salt and pepper. Grill corn, turning occasionally, until tender and lightly charred, about 8 minutes.
  4. Remove corn from grill and immediately brush with the prepared chipotle mayo. Sprinkle with cotija cheese, chili lime seasoning, and additional lime juice if desired.
