Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat. Add onion, green bell pepper, carrots, and garlic to the pot. Sauté for 5 minutes, or until vegetables are tender. Stir in paprika, caraway seeds, salt, black pepper, and bay leaf. Cook for 1 minute, stirring constantly. Add beef broth and canned tomatoes to the pot, stirring to combine. Bring to a boil, then reduce heat and simmer for 20 minutes. Stir in cooked cauliflower rice and continue to cook for another 5 minutes until heated through. Remove bay leaf. Garnish with fresh parsley before serving.
