Ingredients
- 1 1/2 cups crumbled feta cheese
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1/2 cup graham cracker crumbs
- 1 cup pitted dates, chopped
- 1/2 cup walnuts, roughly chopped
- 1 teaspoon ground cinnamon
- 1/4 cup water
- 1/2 teaspoon vanilla extract
- Zest and juice of one lemon
- Pinch of salt
- Fresh mint leaves for garnish
Instructions
- In a large mixing bowl, combine the feta cheese, granulated sugar, softened butter, and a pinch of salt. Use an electric mixer to beat the ingredients until they form a smooth, creamy mixture.
- Transfer the feta mixture into a 9 inch springform pan and spread it evenly. Refrigerate for at least 30 minutes.
- In a separate bowl, combine the graham cracker crumbs with the lemon zest. Mix well to distribute the zest evenly.
- Remove the feta mixture from the refrigerator, and sprinkle the graham cracker crumb mixture over the top. Gently press it down to form an even layer.
- In a small saucepan, combine the chopped dates, walnuts, cinnamon, water, lemon juice, and vanilla extract. Cook over medium heat until the mixture thickens and forms a compote like consistency.
- Remove the cheesecake from the refrigerator, and carefully spread the date walnut compote evenly on top of the graham cracker layer.
- Return the cheesecake to the refrigerator for at least 2 hours or until set.
- When ready to serve, release the springform pan, and place the cheesecake on a serving plate. Garnish with fresh mint leaves.
