Ingredients

  • 1 cup gluten
  • free corn flour 2 cups water 2 tbsp oil 1 tsp salt 1 cup shredded Ajiaco cheese 1 ripe avocado 1 lime 1/4 cup diced tomato 1/4 cup chopped cilantro 1/4 cup red onion, finely chopped 1 jalapeño, finely chopped (optional) Salt and pepper to taste Olive oil for frying

Instructions

  1. a. In a large bowl, combine the gluten free corn flour, water, oil, and salt. Mix until well combined and form into 6 equal sized arepas. b. Heat oil in a pan over medium heat. Fry the arepas for 5 minutes on each side or until golden brown and crispy. Drain on paper towels. c. Prepare the Ajiaco cheese sauce by melting shredded Ajiaco cheese in a double boiler, stirring occasionally until smooth. Set aside. d. Mash avocado with lime juice, salt, pepper, and mix in tomato, cilantro, red onion, and jalapeño (if using). e. To serve, place each arepa on a plate, cut in half or quartered, and drizzle with Ajiaco cheese sauce. Top with a generous portion of guacamole and enjoy!
