Instructions

  1. a. In a large mixing bowl, combine the almonds, walnuts, pumpkin seeds, sunflower seeds, and dried cranberries. b. In a small saucepan over low heat, gently melt the coconut oil and honey or maple syrup together, stirring occasionally until fully combined. c. Pour the melted mixture over the dry ingredients in the mixing bowl, stirring well to coat all of the nuts and seeds evenly. d. Once fully coated, fold in the dark chocolate chips. e. Line a baking sheet with parchment paper or use a silicone baking mat. f. Using a cookie scoop or spoon, drop mounds onto the prepared baking sheet, spacing them about an inch apart to allow for spreading as they cool. g. Place the baking sheet in the freezer for 20 30 minutes or until firm and set.
