Ingredients

  • Tofu Scramble:
  • 1 block (16 oz) firm tofu, drained and crumbled
  • 1/4 cup nutritional yeast
  • 2 tbsp soy sauce
  • 2 tbsp vegetable oil
  • 1 tsp turmeric powder
  • 1/2 tsp ground black pepper
  • 1/4 tsp salt Sesame Bread Sticks:
  • 2 cups all
  • purpose flour
  • 3/4 cup warm water
  • 2 tsp instant yeast
  • 1 tbsp sugar
  • 1 tbsp vegetable oil
  • 1/2 tsp salt
  • 1 tbsp sesame seeds Mushroom Fried Rice:
  • 2 cups cooked white rice, chilled
  • 1 cup sliced mushrooms (shiitake or cremini)
  • 1/4 cup diced carrots
  • 1/4 cup diced green onions
  • 2 tbsp vegetable oil
  • 2 tbsp soy sauce
  • Salt and pepper, to taste

Instructions

  1. Heat the vegetable oil in a non stick pan over medium heat.
  2. Add crumbled tofu and cook for 3 minutes, stirring occasionally.
  3. Stir in turmeric, black pepper, salt, nutritional yeast, and soy sauce. Cook for another 5 minutes or until the mixture is heated through. Set aside.
  4. Combine warm water, sugar, and instant yeast in a bowl. Let it sit for 5 minutes.
  5. In a separate bowl, mix flour and salt.
  6. Add the yeast mixture, vegetable oil, and 1/2 of the sesame seeds to the flour mixture. Knead until a soft dough forms.
  7. Place the dough in an oiled bowl, cover, and let it rise for about 1 hour or until doubled in size.
  8. Preheat oven to 375°F (190°C). Roll out the dough and cut into thin strips. Place them on a baking sheet lined with parchment paper, brush with vegetable oil, sprinkle with remaining sesame seeds, and bake for 12 15 minutes or until golden brown.
  9. Heat the vegetable oil in a non stick pan over medium heat. Add carrots and green onions and cook for 3 minutes.
  10. Stir in mushrooms, cooked rice, soy sauce, salt, and pepper. Cook until heated through and the rice is slightly crispy.
