Ingredients
1 cup unsalted butter, softened
3/4 cup granulated sugar
4 large eggs, separated
2 teaspoons pure vanilla extract
1 1/2 cups all
purpose flour
3/4 cup cocoa powder
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup whole milk
1 cup walnuts, coarsely chopped
Confectioners' sugar for dusting (optional)
Instructions
Preheat oven to 350°F (175°C). Grease and lightly flour a 9 inch springform pan or line with parchment paper. Set aside.
In a large bowl, cream butter and sugar until light and fluffy. Beat in egg yolks one at a time, mixing well after each addition. Blend in vanilla extract.
In another bowl, whisk together flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the creamed butter mixture, alternating with milk, beginning and ending with the dry ingredients. Stir in 3/4 cup walnuts.
In a separate bowl, beat egg whites until stiff peaks form. Fold them gently but thoroughly into the batter. Pour the batter into the prepared pan.
Bake for 40 45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from the pan and letting it cool completely on a wire rack.
Once cooled, dust with confectioners' sugar if desired. Cut into wedges to serve.
