  • 3 large egg whites
  • 150g caster sugar
  • Pinch of salt
  • 1 tsp vanilla extract
  • 2 tbsp freeze
  • dried cloudberries, crushed
  • 8 fresh raspberries
  • 2 tbsp raspberry coulis

Instructions

  1. Preheat oven to 130°C (260°F). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk egg whites, salt and vanilla extract until soft peaks form.
  3. Gradually add sugar, whisking continuously until meringue is glossy and stiff peaks form.
  4. Gently fold in crushed cloudberries until evenly distributed.
  5. Spoon the mixture into 2 circles on the parchment paper. Shape into nests using the back of a spoon.
  6. Bake for 30 minutes, or until meringues are set and slightly golden. Let cool completely.
  7. Top each nest with raspberries and drizzle with coulis.
