  • 1 cup fresh pineapple, cut into 1
  • inch chunks 1 cup fresh mango, cut into 1
  • inch chunks 1 cup fresh strawberries, hulled and halved 1 cup fresh kiwi, peeled and sliced 2 tbsp brown sugar 1 tsp ground cinnamon 1/2 tsp ground ginger 1/4 tsp ground nutmeg 1 cup heavy cream 1 can (13.5 oz) coconut milk, refrigerated overnight and cream separated Zest of 1 lime Juice of 1 lime 2 tbsp honey

Instructions

  1. In a small saucepan, combine the brown sugar, cinnamon, ginger, and nutmeg with 1/4 cup water over medium heat. Stir until the sugar has dissolved, creating a syrup. Remove from heat and let cool.
  2. In a large bowl, whip together the heavy cream, lime zest and juice until soft peaks form.
  3. In another large bowl, gently fold the separated coconut cream into the whipped cream mixture. Add honey to taste and mix well. Refrigerate until ready to serve.
  4. Thread fruit chunks onto skewers, alternating between pineapple, mango, strawberries, and kiwi. Brush with the cooled spiced syrup for an extra burst of flavor.
  5. To plate, drizzle each set of skewers with a generous portion of lime coconut cream. Serve immediately.
