Instructions
- Soak almonds in water overnight, then drain and blend with dates until smooth.
- Add coconut milk, matcha powder, and vanilla extract to the blended mixture. Blend until fully combined.
- Chill the mixture in the freezer for 4 hours or until frozen.
- Remove from the freezer and use an ice cream maker to churn the mixture into soft serve.
- Transfer to a bowl and swirl in pomegranate seeds and shredded coconut.
- Top with desiccated coconut before serving.
