  1. In a large saucepan, combine sugar and water, stirring until sugar dissolves. Bring to a boil over medium high heat.
  2. Insert a candy thermometer and continue boiling without stirring until the mixture reaches 250°F or the hard ball stage.
  3. Remove from heat and stir in lemon juice and floral waters. Let cool for 15 minutes, then pour into a greased 8x8 inch pan. Allow to set at room temperature for at least 2 hours, until firm.
  4. Cut into small squares or diamond shapes and dust lightly with cornstarch.
  5. Melt the chocolate in a double boiler or microwave. Dip each piece of candy halfway into the melted chocolate.
  6. Sprinkle chopped pistachios over the chocolate before it sets, pressing gently to adhere.
  7. Allow the chocolate to harden at room temperature or in the refrigerator.
