Ingredients

  • 8 pieces of fresh, ripe strawberries (hokkaido, if possible) 20g unsalted butter, softened 100g white chocolate, finely chopped 20g sugar 1 tbsp heavy cream 20g mochi rice flour Pinch of salt

Instructions

  1. Prepare the strawberries by washing them gently under cold running water and then patting them dry with a soft cloth. Remove the green leaves and set aside.
  2. In a double boiler, melt the white chocolate until smooth.
  3. Gradually add the sugar to the melted white chocolate, whisking constantly until fully incorporated.
  4. Add the heavy cream and continue whisking until well combined.
  5. Slowly pour in the softened butter while continuously stirring to create a silky ganache. Set aside to cool slightly.
  6. In a separate bowl, mix together the mochi rice flour and a pinch of salt.
  7. Gradually add the cooled white chocolate ganache to the mochi mixture until well combined and a smooth dough forms.
  8. Divide the dough into 2 equal portions and gently shape each portion into a ball using your hands.
  9. Wrap each mochi ball with one fresh strawberry, carefully pressing the sides to ensure it adheres evenly.
