Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line an 8 inch springform pan with parchment paper.
  2. In a large bowl, whisk together almond flour, coconut flour, and salt.
  3. In another bowl, beat the eggs and add granulated erythritol until well combined.
  4. Pour the egg mixture into the dry ingredients and mix well. Stir in vanilla extract, melted butter, shredded coconut, pineapple, and macadamia nuts.
  5. Transfer the batter to the prepared springform pan and smooth the top with a spatula.
  6. Bake for 30 35 minutes or until a toothpick inserted into the center comes out clean. Allow it to cool completely in the pan on a wire rack.
