  • quality 2. 300ml heavy cream 3. 50g white chocolate 4. 50g almonds, finely chopped 5. 3 tbsp raspberry coulis 6. 2 tbsp cherry brandy 7. Mint leaves, for garnish 8. Edible gold dust, for garnish

Instructions

  1. Begin by melting the dark chocolate in a double boiler. Once fully melted and smooth, set aside to cool slightly.
  2. In a separate bowl, whip the heavy cream until it forms soft peaks. Fold the whipped cream into the cooled dark chocolate gently until well combined.
  3. Chill the chocolate mousse in the freezer for 15 minutes to set.
  4. In another double boiler, melt the white chocolate and mix it with the cherry brandy.
  5. Remove the chocolate mousse from the freezer and quickly pour the white chocolate cherry mixture over the top of the mousse in each serving bowl, creating a marbled effect.
  6. Return the bowls to the freezer for another 10 minutes to set.
  7. Top each dessert with chopped almonds, a dollop of raspberry coulis, and a sprinkle of gold dust before serving. Garnish with fresh mint leaves, if desired.
