1 ripe passion fruit 1 ripe mango 2 lime wedges 1 tbsp freshly grated ginger 1 cup crushed ice 3 cups soda water Fresh mint leaves for garnish
Instructions
Cut the passion fruit in half and scoop out the pulp into a blender, adding the grated ginger to it. Blend until smooth. Peel the mango and cut it into chunks. Add them to the blender and blend until smooth. Squeeze the juice from the lime wedges into the blender and blend again until well combined. Pour the passion fruit, mango, and lime mixture through a fine mesh strainer into a large pitcher. Discard any solids left in the strainer. Add crushed ice to the pitcher and top with soda water. Stir gently to combine. Divide the mocktail among 4 glasses, garnish each with a sprig of fresh mint, and serve immediately.
