  3. In the same pan, melt butter and sauté onions and bell peppers until softened. Season with salt and pepper to taste. Set aside.
  4. In a separate non stick pan, cook corned beef according to package instructions. Slice into bite sized pieces once cooked.
  5. Preheat the oven to 375°F (190°C). Lightly grease a muffin tin or use silicone baking cups.
  6. Crack an egg into each greased muffin slot. Season with salt and pepper if desired.
