Instructions

  1. Preheat your oven to 350°F (180°C). Line a muffin tin with paper liners or lightly grease the cups.
  2. In a large bowl, whisk together almond flour, cinnamon, ginger, and a pinch of sea salt.
  3. Add grated carrots, eggs, melted coconut oil, and honey or maple syrup to the dry ingredients. Stir until well combined. Fold in chopped walnuts.
  4. Fill each muffin cup about two thirds full with the cake batter.
  5. Bake for 20 25 minutes, or until a toothpick inserted into the center of a cake comes out clean. Allow to cool completely on a wire rack.
  6. To make the Almond Butter Frosting, mix together almond butter, honey or maple syrup, cinnamon, and a pinch of sea salt in a small bowl until smooth.
  7. Once the cake bites are cooled, pipe or spread a dollop of frosting on top of each bite.
