Ingredients

  • 1 ripe avocado
  • 1 can (13.5 oz) full
  • fat coconut milk
  • 1/2 cup fresh lime juice
  • 1/4 cup raw honey or maple syrup
  • 1/4 teaspoon sea salt
  • 2 cups frozen mixed tropical fruits (mango, pineapple, and papaya)
  • 6oz dark chocolate, finely chopped

Instructions

  1. In a blender, combine the avocado, half of the coconut milk, lime juice, honey or maple syrup, and salt. Blend until smooth and creamy.
  2. Pour the mixture into six individual serving dishes and freeze for 30 minutes to set slightly.
  3. In a double boiler, gently melt the dark chocolate and remaining coconut milk together, stirring occasionally. Once fully melted, remove from heat and let cool slightly.
  4. After the first layer has set, pour the melted chocolate mixture on top of each serving dish, filling to the brim. Return to the freezer for another 30 minutes or until fully set.
  5. Just before serving, arrange the frozen tropical fruits on top of each mousse cup and enjoy!
