Instructions
Preheat oven to 350°F (175°C). In a large bowl, combine coconut flour, almond flour, melted coconut oil, honey, and vanilla extract. Mix until a dough forms. Press the dough into the bottom of greased or lined muffin tins to form tartlet bases. Bake for 15 20 minutes or until golden brown. Remove from oven and let cool completely. In a food processor, blend avocado and coconut milk until smooth and creamy. Spread the avocado mousse onto each cooled tartlet base. Top with pineapple, kiwi, mango, and passionfruit slices, arranging them in an aesthetically pleasing pattern.
