Ingredients
- 1 cup almond milk
- 1/2 cup coconut cream
- 3 tablespoons cocoa powder
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- 20 ladyfingers, vegan
- 2 cups strong coffee, chilled
- 2 tablespoons brandy or dark rum (optional)
- Ground cinnamon, for dusting
Instructions
- In a large mixing bowl, whisk together almond milk, coconut cream, sugar, and vanilla extract until smooth and creamy. Set aside.
- In a shallow dish, combine coffee and brandy or dark rum (if using). Arrange half of the ladyfingers in the dish and soak them in the coffee mixture until saturated but not falling apart.
- Layer the soaked ladyfingers with half of the cream mixture, spreading evenly. Dust with cinnamon. Repeat with the remaining ladyfingers and cream, finishing with a final dusting of cinnamon. Cover and refrigerate for at least 4 hours or overnight.
- To serve, cut into individual portions and garnish with fresh berries or a sprig of mint.
