Ingredients

  • 1 cup raw honey
  • 1 cup water
  • 2 tbsp lemon juice
  • 3/4 cup almond flour
  • 2 tbsp coconut flour
  • 1/4 cup rosewater
  • Zest of one organic lemon
  • 1/2 cup shelled pistachios, roughly chopped

Instructions

  1. In a medium saucepan, combine the honey and water over low heat. Stir until honey has completely dissolved. Add lemon juice and cook for an additional 5 minutes.
  2. In a separate bowl, whisk together almond flour, coconut flour, and half of the pistachios until well combined.
  3. Slowly add the dry ingredients into the saucepan while continuously stirring. Cook for 5 more minutes, or until the mixture thickens slightly and starts to pull away from the sides of the pan. Remove from heat and stir in the rosewater and lemon zest.
  4. Pour the mixture into a parchment lined 8x8 inch baking dish and smooth the top with a spatula. Allow to cool completely.
  5. Once cooled, cut the fudge like confection into small squares or diamonds and roll each piece in the remaining chopped pistachios.
