Ingredients

  • 1 pint fresh strawberries, hulled 8 oz dark chocolate, finely chopped 1 cup heavy cream 2 tbsp granulated sugar 1/4 tsp vanilla extract 3 cups sparkling water, chilled Mint leaves for garnish

Instructions

  1. In a double boiler, gently melt the chocolate. Set aside to cool slightly.
  2. In a large bowl, combine heavy cream, sugar, and vanilla extract. Whip until soft peaks form.
  3. Dip half of the strawberries into the melted chocolate, leaving some space for decoration, then place on parchment paper. Refrigerate for 10 minutes.
  4. Once chocolate is set, drizzle a small amount over each remaining strawberry. Place back in the fridge until ready to serve.
  5. In a large pitcher, combine whipped cream and sparkling water. Gently stir until combined.
  6. Fill glasses with a generous portion of the whipped cream mixture, then add three chocolate dipped strawberries per glass.
  7. Garnish with mint leaves and enjoy the indulgence.
