Instructions
In a large mixing bowl, combine the cherries and honey. Gently toss until the cherries are evenly coated with honey. Set aside to macerate for 30 minutes, allowing the flavors to meld together.
In another bowl, whip the heavy cream, vanilla extract, and sea salt together until stiff peaks form.
Fold the whipped cream into the cherries, gently incorporating them until well combined.
Using a 1/4 cup measure, scoop the mixture into six individual ramekins or dessert glasses. Smooth the tops with the back of a spoon.
Cover each ramekin with plastic wrap and freeze for at least 6 hours, or overnight, until firm.
To serve, remove the frozen treats from the freezer and allow them to sit at room temperature for 5 minutes to soften slightly.
