Add ice cubes to the shaker and shake vigorously until well chilled. In a small saucepan, melt vegan butter over medium heat. Layer phyllo pastry sheets in a baking dish, brushing each with melted butter and sprinkling with sugar and ground cinnamon. Top the layered pastry with chopped pistachios and bake in a preheated oven at 350°F (180°C) for 20 minutes or until golden brown. Cut the baked phyllo into squares and set aside to cool. Strain the chilled cocktail mixture again, then pour over the baklava squares in a glass. Garnish with mint leaves and serve immediately.
