  • 3 oz almond flour 1/2 cup erythritol 2 tbsp water 1/4 tsp rosewater extract 1/2 cup heavy cream 1/2 cup blueberries

  1. In a medium bowl, whisk together almond flour and erythritol. Set aside.
  2. In a small saucepan, combine water and rosewater extract. Heat over medium heat until mixture comes to a boil.
  3. Gradually add the dry ingredients into the saucepan, stirring constantly until well combined and a dough forms.
  4. Remove from heat and allow to cool. Then, shape the dough into small, bite sized pieces and set aside.
  5. In another bowl, whip the heavy cream until it forms soft peaks. Fold in blueberries.
  6. Layer the dough, cream, and blueberries alternately in two serving glasses, finishing with a layer of cream on top. Chill for 30 minutes before serving.
