  • 1. 2 large ripe mangoes, diced 2. 8 oz cream cheese 3. 1/4 cup sugar 4. 1 cup heavy cream 5. 1/2 tsp vanilla extract 6. 2 cups shredded unsweetened coconut 7. 1/4 cup honey

Instructions

  1. Blend mangoes, cream cheese, and sugar in a food processor until smooth.
  2. In another bowl, whip heavy cream and vanilla extract to stiff peaks.
  3. Gently fold the whipped cream into the mango mixture.
  4. Divide the mousse into 4 glasses and chill them for at least an hour.
  5. To make coconut clouds, toast shredded coconut in a pan until golden brown over medium heat. Then, mix with honey and let it cool completely.
  6. Right before serving, top each glass of mango mousse with coconut clouds.
