  • 8 oz gluten
  • free puff pastry sheets 1 cup sour cherries 2 cups heavy cream 6 oz dark chocolate 4 tbsp granulated sugar 1 tsp vanilla extract 1/2 tsp kosher salt Powdered sugar, for dusting

Instructions

  1. a. Preheat oven to 350°F (175°C). On a floured surface, roll out the gluten free puff pastry into a rectangle and cut into four equal squares. b. Place each square on a parchment lined baking sheet and prick them with a fork. Bake for 18 minutes or until golden brown. Allow to cool completely. c. In a saucepan, combine cherries, sugar, and 2 tbsp water. Cook over medium heat until the cherries release their juices and become tender. Remove from heat and let it cool. d. In a separate bowl, whisk together heavy cream, vanilla extract, and salt until stiff peaks form. e. Melt chocolate in a double boiler or microwave. Stir until smooth. Let it cool slightly. f. To assemble, place one puff pastry square on each plate. Spoon half of the cherry mixture onto each square. Drizzle melted chocolate over the cherries and top with a generous dollop of whipped cream.
