Instructions

  1. In a saucepan, combine almond milk, agar agar powder, maple syrup, vanilla extract, and a pinch of salt. Heat gently over medium heat, stirring occasionally until the agar agar has dissolved completely (about 5 minutes).
  2. Remove from heat and let it cool for about 10 minutes, then strain the mixture through a fine mesh sieve into a measuring cup.
  3. Divide the mixture evenly among two ramekins or mason jars. Cover with plastic wrap and refrigerate until set (about 4 hours).
  4. In a small saucepan, combine the wild berries and mushrooms. Cook over medium heat for about 10 minutes, or until the berries have softened and released their juices.
  5. Strain the mixture through a fine mesh sieve into another measuring cup, pressing on the solids to extract as much liquid as possible. Discard the solids. Let the liquid cool completely.
  6. Remove the panna cotta from the refrigerator and carefully spoon the fruit mixture over each one. Return them to the refrigerator until they are chilled through (about 2 hours).
  7. To serve, garnish with fresh mint leaves.
