  • free chocolate sponge cake, diced 150ml cherry compote 200ml heavy whipping cream 3 tbsp powdered sugar 1 tsp vanilla extract Fresh cherries and shaved dark chocolate, for garnish

Instructions

  1. In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  2. Fold in half of the diced gluten free chocolate sponge cake into the whipped cream mixture gently.
  3. In a glass, layer half of the cherry compote, followed by half of the whipped cream mixture.
  4. Sprinkle remaining cake bits over the whipped cream and finish with the remaining cherry compote.
  5. Top with the final layer of whipped cream mixture and garnish with fresh cherries and shaved dark chocolate.
