Ingredients
- 1. 2 cups unsweetened coconut milk 2. 3/4 cup fresh pineapple, diced 3. 1/4 cup honey 4. 1 tsp vanilla extract 5. Zest of one lime 6. Juice of half a lime 7. A pinch of sea salt
Instructions
- Combine coconut milk, pineapple, honey, vanilla, lime zest and juice in a blender. Blend until smooth.
- Pour the mixture into a shallow dish, cover with plastic wrap, and freeze for at least 4 hours or overnight.
- Using a fork, scrape the surface of the granita every hour to create a fluffy, snow like texture.
