  • 1 cup Medjool dates, pitted
  • 1 cup water
  • 1 1/2 cups raw almonds
  • 1 tsp ground cinnamon
  • 1/4 tsp ground ginger

  • 1/4 tsp ground nutmeg
  • 2 tbsp coconut oil, melted
  • 2 cups gluten
  • free rolled oats

Instructions

  1. In a saucepan, combine the dates and water. Bring to a boil over medium heat, then reduce heat and simmer until the dates are softened and the mixture forms a thick paste. Stir in the spices.
  2. In a food processor, pulse the almonds until they form a coarse meal. Add the date mixture and process until combined.
  3. Preheat your oven to 350°F (175°C). Line an 8 inch square baking pan with parchment paper.
  4. In a large bowl, mix together the melted coconut oil and rolled oats until evenly coated. Press two thirds of the mixture into the bottom of the prepared pan.
  5. Spread the date mixture over the pressed oat layer. Top with the remaining oat mixture, pressing gently to ensure it sticks.
  6. Bake for 20 minutes, or until the top layer is lightly browned. Allow to cool completely in the pan before cutting into bars.
