Ingredients
- 1 cup heavy whipping cream
- 2 tablespoons granulated erythritol
- 1 teaspoon vanilla extract
- 2 cups ice cubes
- 4 shots espresso, chilled
- 1/2 cup coconut milk
- 1/2 cup passion fruit pulp
- 1/2 cup unsweetened shredded coconut, toasted
Instructions
- In a large mixing bowl, combine the heavy whipping cream, erythritol, and vanilla extract. Whip until soft peaks form. Set aside. In four glass tumblers or cups, divide the ice cubes evenly. Pour coconut milk over the ice in each glass, filling about two thirds full. Top with a generous scoop of whipped cream, then drizzle passion fruit pulp over the top. Finish by pouring a shot of chilled espresso over the dessert to create a luxurious mocha effect. Serve immediately and enjoy!
