Ingredients

  • 4 (6 oz) salmon fillets, skin

  • 1 lb baby potatoes, halved
  • 1 lb fresh asparagus, trimmed
  • 1/2 cup dill sauce (see recipe below)
  • Olive oil
  • Salt and pepper Dill Sauce:
  • 1/2 cup Greek yogurt
  • 1/4 cup chopped fresh dill
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • Salt and pepper

Instructions

  1. Preheat oven to 400°F (200°C). Season salmon fillets with salt and pepper. Place on a lined baking sheet, skin side down, and drizzle with olive oil. Bake for 12 15 minutes or until cooked through and flaky.
  2. In a large pot, boil water and cook potatoes for 10 12 minutes or until fork tender. Drain and set aside.
  3. Steam asparagus for 4 6 minutes or until tender but still crisp. Season with salt and pepper to taste.
  4. In a small bowl, prepare the dill sauce by mixing together Greek yogurt, chopped fresh dill, lemon juice, minced garlic, salt, and pepper.
