Nuts (Almonds and Cashews)
Ingredients
- 1/2 cup Basmati Rice, washed and drained
- 4 cups Whole Milk
- Pinch of Saffron Strands
- 3/4 cup Sugar, or as needed
- 6 Green Cardamom Pods, lightly crushed
- 1/2 cup Chopped Almonds and Cashews
- 1/4 teaspoon Ground Cinnamon
- A pinch of Salt
Instructions
- In a medium saucepan, combine basmati rice, milk, cardamom pods, and saffron strands. Bring to a boil over medium heat, then lower the heat to low and let it simmer, covered, for 45 minutes or until the rice is tender and the milk has thickened.
- Remove from heat and allow to cool slightly. Discard the cardamom pods.
- In a blender, blend the rice mixture until smooth. Strain the mixture through a fine mesh sieve into another saucepan. Press down on the solids to extract as much liquid as possible.
- Add sugar and cinnamon to the strained milk, then cook over medium heat for about 10 minutes or until the pudding thickens slightly.
- Stir in chopped almonds and cashews, remove from heat, and let it cool. Chill in the refrigerator before serving.
