Instructions

  1. In a large bowl, combine the heavy cream, sweetened condensed milk, and rose water. Mix until well incorporated. Cover and refrigerate for at least 30 minutes.
  2. Preheat oven to 350°F (175°C). In a medium bowl, mix crushed graham crackers, granulated sugar, and butter until well combined. Spread the mixture onto a parchment lined baking sheet and bake for 12 15 minutes or until golden brown. Remove from oven and let cool completely.
  3. In a large mixing bowl, stir in the chopped pistachios to the graham cracker mixture. Once cooled, press the mixture into a lightly greased 9x5 inch loaf pan and refrigerate for at least 30 minutes.
  4. Remove both the ice cream mixture and the chilled pistachio brittle from the refrigerator. Slice the brittle into 1/2 inch thick bars, reserving the scraps for later use.
  5. Pour the ice cream mixture into an electric ice cream maker and churn according to manufacturer's instructions. Once ready, fold in some of the reserved pistachio brittle scraps.
  6. Transfer the churned ice cream into a loaf pan or any desired mold, layering it with remaining pistachio bars. Cover and freeze for at least 4 hours or until firm.
