Ingredients

  • 1 cup heavy whipping cream
  • 8 oz mascarpone cheese
  • 1/2 cup powdered sugar
  • 2 tbsp coffee liqueur
  • 36 ladyfingers
  • 1/2 cup brewed espresso, cooled
  • 8 oz semi
  • sweet chocolate, finely chopped
  • 1/2 cup heavy whipping cream
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. In a large bowl, whisk together the heavy whipping cream and powdered sugar until stiff peaks form. Set aside.
  2. In another bowl, mix the mascarpone cheese, coffee liqueur, and half of the prepared whipped cream until well combined.
  3. Dip ladyfingers briefly in espresso to soak, then layer them at the bottom of a 9x5 inch loaf pan. Spread half of the mascarpone mixture over the ladyfingers.
  4. In a double boiler or microwave, melt the chopped chocolate with the remaining heavy whipping cream, vanilla extract, and salt until smooth and glossy. Allow to cool slightly.
  5. Pour the ganache over the mascarpone layer, spreading evenly. Top with another layer of soaked ladyfingers.
  6. Spread the remaining mascarpone mixture over the ladyfingers, then spread the remaining whipped cream on top. Refrigerate for at least 4 hours or overnight to set.
  7. To serve, use a sharp knife to cut into individual slices, wiping the blade clean between cuts for neat presentation.
