Instructions

  1. In a high speed blender, combine cashew cream, maple syrup, rosewater, and lemon zest. Blend until smooth and creamy. In a separate bowl, mix crushed almonds, chopped pistachios, and diced apricots. Carefully fold the nut mixture into the cream mixture, taking care not to overmix. Pour the mixture into two serving glasses and freeze for at least 4 hours or overnight.
