Tree Nuts (Cashews)

Ingredients

  • 1 cup Thai coconut milk (full fat)
  • 1/2 cup raw cashews, soaked for at least 2 hours
  • 1/4 cup agave syrup
  • 1 tbsp lime zest
  • 2 tbsp lime juice
  • 1 tsp vanilla extract
  • A pinch of sea salt
  • 1/4 cup shredded unsweetened coconut, for rolling

Instructions

  1. In a blender, combine the soaked cashews, coconut milk, agave syrup, lime zest, lime juice, vanilla extract, and sea salt. Blend until smooth and creamy.
  2. Cover and refrigerate the mixture for at least 4 hours or overnight to firm up.
  3. Line a baking sheet with parchment paper. Remove the chilled mixture from the fridge and use a small ice cream scoop or spoon to portion into bite sized balls, then place them onto the lined baking sheet.
  4. Place the shredded coconut in a shallow dish. Roll each bite in the coconut, pressing gently to adhere.
  5. Freeze the bites for at least 2 hours or until firm.

Chef’s Insight

The key to this recipe is allowing enough time for the mixture to chill and firm up in the refrigerator. This step creates the perfect texture for our Thai Coconut Bliss Bites.

Notes

The shredded coconut used for rolling the bites adds a delightful crunch and extra coconut flavor.

Cultural or Historical Background
