  • 3 oz dark chocolate (70% cocoa), finely chopped 2 tbsp unsalted butter 1/4 cup granulated sugar, divided 2 large eggs, separated 1/2 tsp vanilla extract 1/8 tsp salt 1 oz vodka 1/2 oz coffee liqueur 3 oz whipped cream Cocoa powder for dusting 12 edible gold stars (optional)

Instructions

  1. Preheat oven to 400°F. In a heatproof bowl, combine chocolate and butter. Microwave in 30 second intervals, stirring after each interval until smooth.
  2. In a separate bowl, whisk together 2 tablespoons sugar and egg yolks until pale and creamy. Stir in vanilla extract and salt.
  3. Fold melted chocolate into the egg yolk mixture.
  4. Beat egg whites on high speed until soft peaks form. Gradually add remaining 2 tablespoons sugar, beating until stiff peaks form.
  5. Gently fold egg white mixture into the chocolate mixture in three parts.
  6. Divide mixture evenly among two souffle dishes, smoothing tops with a spatula. Place dishes on a baking sheet and bake for 14 16 minutes or until souffles rise and are set around edges but still slightly jiggly in the center.
  7. Remove from oven and let cool. While cooling, prepare cocktails.
  8. In a shaker filled with ice, combine vodka, coffee liqueur, and 2 tablespoons whipped cream. Shake well and strain into two glasses.
  9. Top each glass with remaining whipped cream and dust with cocoa powder. Place a souffle on top and add three edible gold stars perched atop each souffle's peak.
