Ingredients

  • 1. 300g dark chocolate (70% cocoa) 2. 200ml coconut cream 3. 60g ground almonds 4. 50g crushed hazelnuts 5. 20g unsweetened cocoa powder 6. 1 tbsp agave syrup 7. 1/2 tsp sea salt 8. Fresh berries and edible flowers for garnish

Instructions

  1. In a double boiler, gently melt the chocolate until smooth and glossy. Set aside to cool slightly.
  2. In a separate bowl, whisk together the coconut cream, ground almonds, hazelnuts, cocoa powder, agave syrup, and sea salt until fully combined. Gradually add the cooled chocolate, stirring continuously until the mixture is smooth and well blended.
  3. Cover and refrigerate the mixture for at least 4 hours or until firm enough to scoop.
  4. Using a small ice cream scoop, form round truffles from the chilled mixture, then roll them between your hands to create a perfectly round shape. Place on a parchment lined tray and return to the refrigerator to firm up for another 30 minutes.
  5. To serve, garnish each truffle with fresh berries and edible flowers, highlighting their natural beauty and colors.
