Instructions

  1. In a shallow dish, mix the gluten free flour, paprika powder, ground caraway seeds, salt, and black pepper. Coat the chicken pieces evenly in the seasoned flour mixture.
  2. In a large pan, heat 2 tbsp of olive oil over medium heat. Add the coated chicken pieces and cook until golden brown on all sides. Remove from the pan and set aside.
  3. In the same pan, add another 2 tbsp of olive oil. Sauté the onion and garlic until translucent. Add the bell peppers and cook for 5 minutes.
  4. Stir in the chicken broth, tomato paste, and the cooked chicken pieces. Bring to a simmer, then reduce heat and cover. Let it cook for 20 25 minutes until the chicken is fully cooked through.
  5. Meanwhile, prepare the cauliflower rice according to package instructions or by steaming until tender. Gently mix in half of the fresh dill and parsley. Set aside.
  6. In a separate bowl, combine the remaining dill, parsley, lemon juice, and a drizzle of olive oil for the zesty herb salad. Season with salt and pepper to taste.
