  • 2 cups almond flour 1/4 cup coconut flour 1/2 cup granulated sugar 1/2 teaspoon baking powder 1/4 teaspoon salt 1/2 cup unsalted butter, softened 1 large orange, zested and juiced 3 large eggs, room temperature Confectioners' sugar, for dusting

Instructions

  1. Preheat your oven to 350°F (180°C). Grease a mini muffin tin or line with paper liners.
  2. In a medium bowl, whisk together the almond flour, coconut flour, granulated sugar, baking powder, and salt. Set aside.
  3. In a large bowl, cream the softened butter until light and fluffy. Add the orange zest and mix well.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the eggs and orange juice, beginning and ending with the dry ingredients. Mix until just combined.
  5. Fill each muffin tin or paper liner two thirds full with the batter.
  6. Bake for 18 20 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  7. Once cooled, dust with confectioners' sugar.
