Ingredients

  • 2 cups brewed green tea, chilled 1 cup canned lychees, drained and reserved liquid 4 tablespoons honey, divided 6 sprigs fresh mint 6 lychee halves for garnish Edible gold flakes (optional)

Instructions

  1. In a blender, combine the chilled green tea with 3/4 cup of the reserved lychee liquid and 2 tablespoons honey. Blend until smooth.
  2. Pour the mixture into a large measuring cup and set aside.
  3. In another blender, combine 6 lychees, the remaining 2 tablespoons honey, and blend until frothy and smooth. Strain the mixture through a fine mesh sieve into a bowl, reserving the foam for garnish.
  4. Gently swirl the honeyed lychee foam atop each serving glass.
  5. Divide the green tea mixture among 6 glasses.
  6. Garnish with a mint sprig and a lychee half.
  7. Sprinkle gold flakes over the foam, if desired.
  8. Serve immediately.
