Ingredients

  • 1 1/2 cups graham cracker crumbs

  • 2 cups fresh cherries, pitted and halved

  • 1/2 tsp vanilla extract
  • 1 tbsp cornstarch
  • 1/4 cup water

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12 cup muffin tin with paper liners or lightly grease the cups.
  2. In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until well combined. Press 1 2 tablespoons of the mixture into the bottom of each muffin cup. Bake for 5 minutes, then let cool.
  3. In a large bowl, beat together cream cheese, sugar, vanilla extract, and eggs until smooth. Stir in sour cream. Pour about 1/4 cup of the cheesecake filling over the crust in each muffin cup. Bake for 20 25 minutes or until set. Let cool completely.
  4. In a small saucepan, combine chocolate, whipping cream, and butter. Heat gently, stirring occasionally, until smooth and glossy. Let cool slightly.
  5. In another saucepan, mix cherries, sugar, and vanilla extract. Cook over medium heat for about 5 minutes or until the cherries soften. In a small bowl, combine cornstarch and water, then add to the cherries. Cook for 2 more minutes until thickened.
  6. Spoon a dollop of chocolate ganache on top of each cheesecake bite, followed by a spoonful of cherry compote. Use a toothpick or skewer to create swirls in the ganache for an artistic touch.
