  • 8 oz mascarpone cheese, softened
  • 1/2 cup granulated sugar substitute
  • 1 tsp pure vanilla extract
  • 1/2 cup strong brewed espresso or coffee

Instructions

  1. In a large mixing bowl, combine the heavy whipping cream, mascarpone cheese, sugar substitute, and vanilla extract. Beat with an electric mixer on high speed until stiff peaks form. Set aside.
  2. Pour the brewed espresso or coffee into a shallow dish. Quickly dip each ladyfinger into the espresso and place it in the bottom of each serving glass.
  3. Generously layer the whipped cream mixture over the soaked ladyfingers, making sure to press down slightly for an even surface.
  4. Dust the top of each serving glass with cocoa powder using a fine mesh sieve.
  5. Chill in the refrigerator for at least 2 hours before serving.
