Ingredients
- 1 cup heavy whipping cream
- 8 oz mascarpone cheese, softened
- 1/2 cup granulated sugar substitute
- 1 tsp pure vanilla extract
- 1/2 cup strong brewed espresso or coffee

- 3 tbsp unsweetened cocoa powder
Instructions
- In a large mixing bowl, combine the heavy whipping cream, mascarpone cheese, sugar substitute, and vanilla extract. Beat with an electric mixer on high speed until stiff peaks form. Set aside.
- Pour the brewed espresso or coffee into a shallow dish. Quickly dip each ladyfinger into the espresso and place it in the bottom of each serving glass.
- Generously layer the whipped cream mixture over the soaked ladyfingers, making sure to press down slightly for an even surface.
- Dust the top of each serving glass with cocoa powder using a fine mesh sieve.
- Chill in the refrigerator for at least 2 hours before serving.
Chef’s Insight
Allow the espresso-soaked ladyfingers to sit for a few minutes before layering them with the whipped cream mixture to ensure they absorb the flavors fully.
