  • free bacon
  • 1/2 cup cherry tomatoes, halved

  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat a large non stick skillet over medium heat.
  2. Add bacon to the skillet and cook until crispy, turning occasionally. Remove from skillet and let cool on paper towels. Crumble when cooled.
  3. In the same skillet, add olive oil, onions, and mushrooms, cooking until softened and fragrant.
  4. Add cherry tomatoes to the skillet, season with salt and pepper, and cook for 2 3 minutes.
  5. In a separate pan, fry eggs to your desired preference.
  6. On individual plates, layer spinach leaves, sautéed vegetables, crumbled bacon, and top with the perfectly cooked egg.
  7. Season with additional salt and pepper if desired, and serve immediately.
